Mbappe rounded the keeper to slot it into an empty net in the first half before racing away to score his second to make it 3-0 to PSG.
With a close-range header, full-back Alessandro Florenzi scored after hitting the post twice.
And Pablo Sarabia, a Spaniard, who set up Florenzi, made it 4-0 late.
In the 12th minute after having caught him in the stomach with his studs, Nimes defender Loick Landre was sent off for a reckless challenge on Rafinha.
